An experimental test of the Gallavotti-Cohen fluctuation theorem

Abstract
The chaotic hypothesis of the Gallavotti-Cohen theory is experimentally checked on turbulent Rayleigh-Benard convection. We find that the local temperature fluctuations verify the hypothesis prediction.
